These aren’t exactly Monster cookies (the ones with M&M’s and nuts and all that junk) but the title would have been too long if I had written out Gluten Free Almond Meal Cookies w/ Candy Coated Milk Chocolate so that’s what we’re making.
In my passion for healthy eating I did not want to lose my roots too much. This quinoa bowl was an attempt to re-create a healthier version of arroz con pollo and a side of refried beans. Of course it’s very different but the flavor is still there and it’s so much healthier.
